Heritage Tomato, Fennel and
Olimágina Salad

Serves 4


  • 600g Heritage tomatoes of varying colours and sizes
  • 1 fennel, finely sliced

The Dressing

  • 20ml white wine vinegar
  • Juice of a quarter lemon
  • 1½ tsp caster sugar
  • Generous pinch of salt
  • Pinch of pepper
  • A handful of flat leaf parsley, finely chopped
  • 50ml Olimágina Extra Virgin Olive Oil


Slice and quarter a selection of Heritage tomatoes, place into a mixing bowl. Wash the fennel thoroughly, pat dry, and slice finely into long, thin strips.

In a small mixing bowl, combine all the dressing ingredients and whisk together.

Coat the salad lightly with the dressing and serve.
